Spinach Tuna Frittata
Who doesn't like egg for breakfast. Here's a recipe packed with iron and vitamins which will keep you as strong as Popeye to endure all the challenges heading your way.

Cooks in: 20 minutes
Ingredients:
2 medium egg
1 cup spinach
1 medium tomato
1/4 can tuna in water, (drainned)
1 slices mozzarella cheese
1/2 tbsp olive oil
Himalayan pink salt, to taste
1 medium apple
Method:
1. Saute the spinach with 1/4 tbsp olive oil over medium heat, about 3 minutes. Transfer the spinach to a plate.
2. Cook whisked egg with the other 1/4 tbsp olive oil, until set on the bottom, spoon in the spinach and tuna over half of the frittata. Cover with lid. After 1 minute, lay the cheese and fold over frittata over the filling. Transfer the frittata to a plate.
3. Sprinkle some salt onto cut tomato and cook cut side for about 2 minutes.
4. Serve hot with a fresh red apple.
