Braised Chicken with Black Fungus
Braised chicken with black fungus is a famous oriental dish that every family would love. Black fungus is high in iron and dietary fibre. Ingredient:
2 skinless chicken thigh
1/2 cup black fungus (cloud ear fungi) (soak with water until soft)
1 clove garlic (chopped)
2 tbsp dark soy sauce
1/2 tbsp light soy sauce
1 tspn sesame oil
1 tspn brown sugar
1 cup water
1 tbsp olive oil
2 cup bok choy
2 cup cooked whole grain borwn rice
2 hard boiled egg (shelf removed)
Method:
1. Mix the dark soy sauce, light soya sauce, sesama oil and brown sugar in a bowl. Then marinate the chicken thigh with the sauce for about 30 minutes.
2. After 30 minutes, saute the chopped garlic with olive oil over medium heat, then add the chicken and black fungus. Add the water and hard boiled egg then bring to boil and braise until the sauce is thickened.
4. Meanwhile, blanch bok choy in boiling water for about 3 minutes. Then set aside.
5. Serve with rice.
