Lemon Chicken Soupy Rice

Ingredients:
1 Chicken breast (boneless, skinless)
2 tomato (chopped)
1 onion (chopped)
0.5 yield of lemon juice
0.25 tspn Himalayan pink salt
1 tbsp olive oil
2 cup water
2 hard boiled egg
1 cup cooked whole grain rice
Method:
1. In a pot, saute the onions with olive oil over medium heat for a few minutes.
2. Add the water, tomatoes, chicken breast and salt. Bring to boil, reduce the heat to low and allow to simmer for 20 minutes.
3. Remove the chicken from the soup, allow it to cool, shred it and put it back in the soup. 4. Serve over rice and top it with the lime juice and hard boiled egg.
