One-Pot Chicken Rice

Another super easy recipe for super busy you. It is so simple that you just need to put all the ingredients in the rice cooker, set it on timer, and come back for a deliciously healthy homey meal.

Difficulty: Super Easy

Cooks in: 45 minutes

Ingredients:

1/2 cup whole grain rice (dry)

1 chicken breast (250 g, skinless, boneless, diced)

1 cup carrot (diced)

2 eggs

5 slices ginger

1 tbsp olive oil

1/5 tspn himalayan pink salt

4 cup romaine lettuce

1 cup water

Methods:

1. Wash the rice and put chicken breast, carrot, ginger, salt, olive oil and water into the rice cooker and give it a nice stir. Then add the whole egg in (so that it cook into hard boiled egg). Turn the rice cooker on.


2. When the rice is cooked, take out the eggs and remove the shell. Serve the rice with romaine lettuce.
