One-pot Salmon Rice
Salmon rice for lunch anyone? This meal is not only rich in omega-3, it is also packed with all the nutrients that our body need, like potassium, vitamin A, B6, B12, C, selenium and niacin. This recipe is ideal for lunch-box meal too.

Ingredients:
200g Salmon slice (skinless)
0.5 cup Whole grain brown rice (washed and drained)
3 medium Tomato (chopped)
0.5 medium Tomato (sliced, for garnishing)
1 cup Pasrley (chopped)
1 cup Celery (chopped)
2 clove Garlic (chopped)
0.25 cup Onion (chopped)
1 Hard boiled egg
1 tbsp Olive oil
2/5 tspn Himalayan pink salt
1 small head Iceberg lettuce
2 tbsp Spring onion (for garnishing)
Method:
1. In a frying pan, saute onion and garlic, and celery with olive oil at medium heat for about 2 minutes. Stir in the rice and chopped tomato, then season with salt. Stir well.
2. Pour the rice into rice cooker, add water (usual amount use to cook rice) and the whole egg (so that it cooks into hard-boiled egg). Turn the rice cooker on.
3. 10 mintues before the rice is cooked, take the hard boiled egg out, stir in the salmon and parsley, let it cook.
4. Serve hot with iceberg lettuce, sliced tomato and half of the hard-boiled egg.
