Avocado Toast with Poached Egg and Sweet Corn

Ingredient:
4 slices of green apple bread (recipe refer here)
2 medium Egg
Lime juice (0.5 lime yield)
0.5 cup Sweet corn (peeled)
0.5 Avocado
2 medium Granny smith apple
1/5 tspn Himalayan pink salt
2 dash black pepper
Method:
1. In a pot, bring water to boil then blanch the sweet corn for about a minute, then take them out and drain. Turn the heat to low (water should be bubbling only) then crack in the egg, let it cook for a minute then turn off the heat and let the egg sit for about 3 minutes. Scoop it out and rest aside.
2. Scoop out the avocado, mesh it with a fork and season with lime juice and salt.
3. Spread the avocado mesh on the bread then top the bread with poached egg and sweet corn. Season the egg with some black pepper.
4. Serve with granny smith apple.
