One-pot Tumeric Chicken Rice

Tumeric is a potent medicine that has long been used in traditional chinese and indian medicine. It is used traditionally as anti-inflammatory agent. Numerous clinical studies also showed that it is a relief for rheumatoid arthritis. For people who has indigestion or heartburn problem, this is a ingredient you would like to store up in your kitchen. Here's an easy recipe for you to include tumeric into your diet. To balance-up the meal, it is served with stir-fried bok choy.

Cooks in: 45 minutes

Ingredients:

Tumeric chicken rice:

1/2 cup Whole grain brown rice (dry)

200 g Skinless chicken breast (diced)

1 medium Red tomato (sliced)

1 tbsp Tumeric powder

1 clove Garlic (grated)

1 tbsp Olive oil

1/5 tspn Himalayan pink salt

1 cup Water

Stir-fried bok choy:

5 handful bok choy

1 clove Garlic (chopped)

1 tbsp Olive oil

1/2 tbsp mushroom sauce

Method:

1. In a rice cooker, pour in washed brown rice, chicken, tomato, tumeric powder, garlic, salt, olive oil and water then stir well. Turn the rice cooker on.


2. Five mintues before the rice is cooked, in a frying pan, saute garlic with olive oil with medium heat, then add the bok choy and cook until the bok choy is tender then add the mushroon sauce for seasoning .


3. Serve hot.
