All-in-one-go Lemon Baked Fish

Live is so busy, so you shouldn't be putting too much tension on yourself when it comes to preparing a hearty meal. Here's a all-in-one go recipe which need the least preparation and you won't be spending time cleaning up the mess after the meal.

Difficulty: Super Easy

Cooks in: 45 minutes

Ingredients:

2 Whitefish fillet (200g)

2 medium potato (wedged)

20 Cherry tomato (halved)

1 small Zuchini (sliced)

3 tbsp Olive oil

1/4 lemon (juiced)

1/5 tspn Himalayan pink salt

Method: 1. In a bowl, toss the potato wedges with 1 tbsp olive oil and some salt. Bake at 180°C for 20 minutes on a baking tray lined with aluminium foil.


2. In a separate bowl, toss tomato and zuchini with 1 tbsp olive oil, some salt and half of the lemon juice. Set aside.


3. After 20 minutes, pop in the vegetables and fish rubbed with olive oil and salt. Bake along with potato for another 20 mintues.


4. Pour the rest of the lemon juice on the fish before serving.
