One-pot curry chicken rice for a healthy heart
Do you know that eating curry could reduce the risk of heart disease? Research shown that spices like coriander, cinnamon, chili, cumin, turmeric and ginger used to make a nice bowl of curry have anti-inflammatory and anti-oxidant properties which help to protect your heart. In conjunction of Wolrd Heart Day, I'd like to share an easy one-pot curry rice to spice up your heart. It is so easy to make that you will want to get more ideas of one-pot rice that you and your loved ones would love. Give it a try.
Babas curry powder is a premix curry powder which contains the spices as in the photo. It is a great option if you don't have the time to prepare your own curry paste.

Prep Time: 20 minutes
Ingredients:
0.5 cup brown rice (washed)
2 chicken thigh (bone and skin removed, cut into bite size)
2 carrot (cut into bite size)
1 tomato (wedged)
1 cup of water
3 tbsp of Babas curry powder
1 tbsp of Olive oil
1/5 tspn of Himalayan pink salt (to taste)
2 eggs
1. Put everything (except the egg) into the rice cooker and give it a nice stir. Select the rice cooking option and let the rice cook.
2. 10 minutes before the rice is cooked, put the whole eggs into the rice cooker to get 2 nice hard boiled eggs.
3. Serve with your choice of veggie.
